this is my beautiful refugee family. we have been mentoring them since march, but they have surely helped me and given more to me than i have ever given to them. the other day when we were visiting they taught us how to make traditional nepali momo. it was so much fun. then they fed us a huge plate of them and only ten minutes later fed us another large plate of food. this family came here with almost nothing. yet it is so natural to them to serve and give to others. this beautiful family will always have a special place in my heart and will always be great examples to me. i adore them!

this week has been a mix of terribly stressful situations and crazy drama. yet somehow i have managed to witness some small but genuine acts of kindness. either being the receiver or just a witness has truly brought joy into my life and helped me to remember how amazing people can be. on tuesday, i BARELY made the bus and waited to get on last because i was the last one there... a kind man let me board before him and then later gave up his seat for an elderly woman who came on the bus. although small, it made me stop and think. there still are some real gentlemen in this world. for another example, today as i walked into the bathroom in the library, my awesome beaded bracelet broke. beads flew to all corners of the old bathroom. i couldn't believe it. i was not about to throw it away though. i proceeded to pick up every single small bead on that dirty bathroom floor. two girls came in and started to help me pick up these small beads! a seemingly insignificant bracelet now has become a reminder to me of the goodness of humanity. i'd never even seen these girls before, yet they got on their hands and knees to help me collect every last bead. i am grateful to have witnessed these small yet powerful events. i vow to find one every week that i can post on here. i am sure i will find more than one. this world is a glorious place filled with glorious people if we choose to see it! :)

i am getting closer and closer to the end of this semester and closer still to the end of this "intervention". i wouldn't go so far as to call it successful. i am on the road to success for sure. 29 days simply isn't enough to fully change my life. i will continue this process and try my best. currently, i am trying not to completely freak out. procrastination is the worst. why why why!?!? sorry for the scattered thoughts... i believe i will come to a better conclusion tomorrow. farewell.

snowy excursions with a friend.

a few thoughts:

this blogging of my intervention was kind of a dud. no one really follows my blog and i haven't made an effort to advertise or post things on facebook because i have been busy and didn't realize. blah. oh well. this has been good for me. even though i haven't done it every day. i have been keeping a daily journal of my progress (which has been made). i am seeing my life in a different light. i can see clearly my areas of weakness and i know how i can go about fixing them. i have also realized how much happier i am when i accomplish 5/5 tasks and how integral each of them are to my life. missing even one will throw my schedule off and my emotional well-being. as i write this at ELEVEN!!!!!! good gravy, katelyn! you know what. i am going to finish my thoughts tomorrow. i must sleep. loves.

so, dear friends here is the haps: even when i accomplish 5/5 physical tasks for the day, i can be miserable. how can that be? this plan was supposed to be foolproof. yes, my day is productive and my mood is improved, but with out the emotional re-framing i am miserable. it is SO hard to remember to attach those blasted "new rules" in my novel! i have been making a lot of changes and restructuring this plan as i go. alas, this week i have learned a magical secret: when i am down in the dumps, i realize that i have not yet read my scriptures. seriously that IS the problem. i have noticed a huge difference in my life when i go a day without study. i am in a bad mood and i struggle to do my homework. the moment i open my scriptures, i am happy. my burden is lifted and i have clarity. i will keep going, i shall not quit. even if nobody reads this blog or follows my intervention plan, i will succeed because i need this. holler.

epic aerobic workout session.

of the five tasks - which one was easiest for you to accomplish today?

making my bed. always the easiest because it was already a habit. :| the only problem is, i sometimes forget to do the emotional re-framing. i am thinking about putting a reminder next to my bed.

2. what was your biggest speed bump?

my computer. easily. the moment i get on to check my email/tumblr/facebook - thirty minutes have flown by and i have just wasted a good portion of my day. also, i have been in an emotional slump for certain reasons and that affects it a lot. although, when i study my scriptures it helps me to re-focus.

3. did you complete them with a positive or negative attitude?

i would say that i was positive about all of them except my chores. i had a few to catch up on from last week and it just frustrated me. that is my own doing though. and once i got done with them... i realized that it took very little time. also, my dear friend elise came to help me with some of them :)

4. how do you feel now?

i feel pretty good. i like that i can see a definite change in my productivity. i am hoping it will only get better and easier from here on out.

5. what will you do differently tomorrow?

i think the visual reminders of the emotional re-framing will make a difference. i am not struggling to accomplish the actual task... but when i struggle it is because i have forgotten to implement the new rules. also, i will be going on more adventures.

today was a mostly-good day. i was able to accomplish all five tasks. not with all of the vim & vigor i would've hoped though...alas, tomorrow is another day & i will try again. i didn't realize how hard it would be to remember to re-frame my thoughts. it is amazing how easily we get caught up in small worries or trials. life is so beautiful and amazing -- yet i keep forgetting to open my eyes! so, every night i am supposed to keep a log of the days happenings. i have found it enormously helpful in keeping my goals in check. well, i must away.

PERSONAL SCRIPTURE STUDY à reframe my thoughts about life with an eternal perspective. What is my ultimate goal? be kind to others & be positive.

DAILY EXERCISE à when I exercise I am becoming healthier and remembering that I am beautiful. I not others decide what is good enough. "comparing is the cancer to happiness" I have great selfworth.

CHORES & HOMEWORK à do what needs to get done before I do what I want to. I have self-control – work is not the enemy. I am exercising my core need of agency by choosing to do this work.

EARLY TO BED, EARLY TO RISE à "sleep is the golden chain that ties health and our bodies together." – thomas dekker. a happy day is a productive day. I won't be able to work hard and accomplish much if I am weary and tired.

ha ha ha. i was wrong. not that i have given up. i have been trying to use this week to its fullest. my "kick start activity" did not go as planned. i just finished cleaning out my room and it looks great...alas.. i have not been so great at this plan. just you wait until monday. this week has been a good trial run. i have made some adjustments and know what to do in the future. let's just get real though...my bed looks great. :)

greetings, people of the internets. over the next month [starting march 14th] i will be conducting a self intervention plan that i wrote. for my 'family in stress' class as the semester project. we've been asked to choose one area of our life that causes the most stress. we must then write an entire intervention plan on how to specifically change & apply what we have been learning, as to become better people and reduce stress. i have decided to work on being more consistent with my personal goals. i will be using my blog as a log of my daily progress. i will be updating it daily with photos and a synopsis of my accomplishments and such. i am totes excited for this plan. hopefully by the end of the month [april 18th] i will make these things a habit in my life and truly be able to live my life to the fullest. holler!

whilst dining at the lovely chipotle this evening, trying to eat the fabulous burrito while simultaneously trying to keep it from falling apart and onto the table...i came up with a brilliant plan. i asked for a spare tortilla (which was freeeee) and sneakily transfered half the filling into the new tortilla and made two modestly portioned burritos. they were easy to hold and eat. i was so happy. i now have a brand new burrito in my fridge for breakfast. i feel like i have accomplished something great. hahaha. just thought i would share this plan with the peoples! i shall now bid you adieu. + i enjoy being happy, so why do i not decide to be happy always?

+ i think the entire human race sometimes forgets that we have all been given the most wonderful gift: the earth. i seriously think about the amazing miracle that happens every time a seed is planted and some fabulous vegetable/fruit/grain comes up. how great is that? i know that i take that for granted sometimes, but it is truly a miraculous thing.

+ i believe that music can heal the soul. it is AMAZING what happens when you are feeling down and all of the sudden, one of your favorite songs starts to play...wow. another miracle.

+ i am so grateful i live in a country with so many freedoms. i have only been able to glimpse at life without those freedoms, but even a glimpse is hard to deal with. i wish i could remember that always and realize how blessed i am. i am glad that i at least remember from time to time.

+ i guess my thoughts are along the lines of miracles and blessings. so whilst i am there, i will share with you one last thought. laughter. is a miracle. laughter transcends language. it can instantly improve any day or situation. also: i do NOT understand why mary poppins made everyone stop laughing in that scene with uncle albert. it frustrates me still to this day.

ONE - my family. what a brilliant idea, a family. friends for life.

TWO - earth. the beautiful place in which i live.

THREE - humanity. i love people. they are my brothers & sisters.

FOUR - music. one of the most beautiful & powerful forms of expression/communication.

FIVE - color. yellow, pink, green, brown, blue, purple, orange and red.

SIX - home. a place of comfort and joy. your own space. a place to create.

SEVEN - imagination. making the ordinary extraordinary and bringing a much needed change.

EIGHT - good smells. lilacs, freshly mown grass, rain, cinnamon, lavender, sagebrush, my grandparents houses, old books, ink, the sea, blossoms in spring, onions sauteing, airports, lilies, freshly baked bread, pie, old spice, the mountains and tea.

NINE - containers. i know this is strange, but i love all sorts of containers. glasses, jars, purses, boxes, bags, vases, envelopes and baskets.

hello dearest peoples. this book, has changed my life. you better believe it. validating everything my mother taught me {growing up} about nutrition, expanding on ideals that i always held, teaching me more about the SIMPLE facts of food and nutrition and showing that there is hope for mankind to rethink their ways. if i could get people to read this book, the most IMPORTANT book regarding health/nutrition/food, that would be an amazing thing. in fact, i would so like everyone to read this, that if you do, i will make you dinner. yes. i am for REAL. i have read many a book about food/nutrition in my day and while offering a bit of truth and helpfulness, they were always a bit complicated and overboard. while reading this book, i have had so many "duh" moments that its not even funny. it really just makes sense. nothing to insane and "modern". yes, i will go as far as saying this is one of my top five "life changing" books ever. i am serious about the making dinner thing too...so let me know if you want to take my challenge. farewell.

i am surrounded by ridiculously creative people. i have a family full of writers, painters, photographers, historians, speakers, musicians & so on. my sisters (bekah & jessica h.) and father especially are fabulous writers. it is unreal to me how they can pull you into their minds with words & strategically placed punctuation. their prose can move one's heart in a single sentence. to read their stories & poems is like stepping into a whole new world.

i never thought of myself as a writer. i only ever wrote what i had to in school.

my poetry is full of sarcasm and fifty dollar words. recently i have come to see that i am a writer. i can't spin words into beautiful pictures like my family can. i am a different kind of writer. i have been a faithful journal keeper since i turned 12. i have notebooks full of lists, ideas, thoughts, words i like, notes & events. the things i write about may not win me a pulitzer or be published in a leather bound book. they paint a simple picture. probably with stick figures. but it is a picture of my life and happenings. the artists that i am surrounded by inspire me to try. i believe that everyone has something important to leave to the future generations.

i wonder how i would've turned out, had i not been taught the history of the world or the stories of my ancestors. i'm thinking i would be boring, unsure and lifeless. to know where one comes from, is to realize where one can go. hmmm. yes, i believe that is all i have to say at this point.

this is what i had for breakfast.

& the strawberry i cut up just so HAPPENED to be in the shape of a heart.

pretty sure that is amazing. it was beautifully tasty.

how to make the perfect bowl of oatmeal:

5 tbl. {old fashioned} rolled oats

3/4 cup water

milk or soymilk

agave, stevia, or brown sugar.

cinnamon or cardamom

fresh or frozen fruit

chopped pecans or almonds

put a medium sized handful of oatmeal in a microwave safe bowl and cover over with water. microwave for about two minutes. add sweetener, spices and a bit of milk. microwave for about thirty seconds more. add fruit and nuts. eat.

i have revised this recipe with measurements. hooray.

these camera phone photos really don't do justice to the gloriousness that is, the blue plate diner.

forget all you ever knew about diner food.

okay maybe not all of it. blue plate still has the nostalgic shakes, sandwiches and lovely breakfasts that one would find in a run of the mill greasy spoon.

they just happen to have a little less grease.

it is very clean, friendly, and tastylicious.

the ambience is comfy, retro, and fabulous.

everything a diner should be.

the menu is varied and full of options for both omnivores and vegetarians.

i personally love their salads and breakfast.

pricing is decent and well worth every penny.

the only thing they lack is adequate parking, which is a small price to pay for a fabulous experience.

if you have not been there, you should take a trip.

here are some ideas that i have found useful.

1- LOCATION: if at all possible, go somewhere where you feel most at ease. your room, on a walk, sitting by a pond or wherever. surround yourself with beauty and calm. looking through a book of art or even closing your eyes and traveling somewhere in your mind can work just as well.

2- LISTEN: depending on your situation you can either listen to the world around you or to some peaceful music. i recommend beirut, pierre lapointe, yann tiersen or jean-yves thibaudet.

3- LAMENT: i find that expressing ones anguish can help ever so much in overcoming it. i love to write in my journal, write some lame poetry or paint.

4- LAVISH: indulge in something that you know makes you feel better. sometimes i will read a cheesy book or watch an episode of the it crowd/the office and laugh it off.

5- LET GO: a lot of the time, the reasons for my disheartened spirit are ridiculous.
miscommunication, poor judgment or lack of understanding tend to happen all to frequently. usually, in time, i remember that i don't have to feel like this as much as i do. i have the power to choose to be happy or not. when it comes down to it, we decide how we react to life. whether we make it awesome or stupid. hopefully this realization comes sooner than later.

i will keep this short and sweet because most of these places i write about are so jive that you must just go visit and no amount of detail could make you love them as much as seeing it with your own eyes. utah is very blessed to have slowtrain. it is easily the best indie music store i have ever been to, thus far. they specialize in cds/dvds/vinyls from independent and local artists. they have a wonderful selection and i can always find really good deals on vinyls of bands i love. hooray for amazing music shoppes! slowtrain also frequently has local/indiesundays artists play live and its usually free/cheapcheapcheap. i recommend this store to anyone who loves really amazing stores with really amazing merchandise. they are located at 221 e broadway (200 e 300 s) in the slc. hours:mon - sat from 11am to 10pm and from 12pm to 6pm.

i recently made this AMAZINGLY tasty soup with my crew.
it turned out really well. if you haven't tried lamb, you must.
it has a more distinctive taste, but it doesn't give you that heavy sinking feeling that one sometimes gets from eating beef. we got the recipe from everyday food. one of the best food magazines i have ever come across. brilliant. easy and simple, and extremely tasty. so if you get a chance, try it out. this recipe is divine.

what you need:

½ cup all-purpose flour

coarse salt and ground pepper

3 pounds boneless lamb stew meat

3 tablespoons canola oil

1 large onion, chopped

¾ teaspoon dried thyme

1-½ cups dark beer

1-½ pounds medium new potatoes, peeled and quartered

1 pound carrots, peeled and cut ½ inch thick diagonally

3 tablespoons chopped fresh parsley

In a large bowl, season flour with salt and pepper. Dredge lamb in flour mixture, shaking off excess. In a Dutch oven, heat oil over medium heat. Working in batches, brown lamb on all sides, about 5 minutes per batch. Transfer to a plate.
Pour 1/4 cup water into pot, scraping up browned bits from bottom with a wooden spoon. Add onion; cook, stirring occasionally, until water has evaporated and onion is beginning to soften, about 5 minutes. Return lamb to pot; stir in thyme, beer, and 1 1/2 cups water. Cover; simmer until lamb is tender, 1 to 1 1/2 hours.
Add potatoes, carrots, and 1/2 cup water. Cook, covered, until vegetables are tender and stew has thickened, about 20 minutes. Season with salt and pepper. Let cool completely before storing. Stir in parsley just before serving.

notes: i didnt have any dark beer on hand, so i substituted it with part vegetable broth part apple juice concentrate. it worked really well. i also didnt have three pounds of meat, so i used what i had, and just added more vegetables. you can basically substitute/alter almost anything you want to when making soup.

easily one of my favorite places in the world.
i get an immediate feeling of comfort as i walk through the doors.
with its eclectic 1920's vibe and lovely swing music playing the background it became
the tea room i frequented most.
the bee hive tea room offers a wide variety of loose teas and tasty sandwhiches & soups.
they also offer afternoon tea by reservation and have a lot of groovy desserts and drinks that would delight anyone of any age. it is nestled right in the heart of the SLC on 300 south.
i recommend this to anyone who enjoys tea, a comfortable place to read or talk with friends or someone who just wants to have a delightful experience.

the competition of the two has been going on for years.
in my opinion, dill pickles win, hands down.
there are many contributing factors.

now, what is a pickle?
food preserved in an solution usually a brine or a vinegar syrup.
- A pickle goes well with a hamburger.

now that we have that fact established we can move on to more extensive pickleness.

depending on the kind of person you are, depends on the kind of pickle you choose to consume and root for in the journey i like to call life. to some, their pickle destiny is with them from birth, others will have to find it through hardwork and perserverance.

i have always known that:
dill pickles reign supreme.

yes pickles do have a higher archy. this is true. alas, there are those people who choose the sweet pickle over the dill and i have come to learn that i can compormise. may i introduce you to a good friend of mine...the bread and butter pickle.

some would like to believe that this pickle tends to lean on the more sweet side than the dill side, alas, this is a falsehood if i've ever heard one. to me a bread and butter pickle is the perfect blend of sweet and dill to create a lovely sandwich pickle. that is to say, a tuna sandwich. the only sandwich i actually eat pickles with. indeed, one could eat said pickle just by itself.

3 - recently i have had a small addiction called, smallville.
it's been pretty rough but im sure i will get through it.
the show sucks you in and you cant help but love it.

i have been wanting to for quite some time but apparently its not warm enough.

i have noticed that i usually have things to say in fives.
so i am going to live on the edge.
i have seven things to say.

1 - pirates of the great salt lake. please spare yourself from viewing such a "film" .
yes, it was amazing and borderline unbearable...alas, if you have to pay for it...just say no.
and thats all that i can say about that.

2 - new song for the peoples.

the feeling - fill my little world.

3 - the other day, i came across this gem.

framed on a wall in my future house, yes.
thats what i thought.

4 - i saw a lovely movie on wednesday. a good year. with russell crowe.
it was actually refreshingly amazing. and the soundtrack was divine.
to anyone who loves wine, france, vineyards, amazing music & gorgeous cinematography...
i suggest you view said film. amen.

5 - if anyone actually reads this blog...i would like some input. i am in the process of building my own library. i have a substantial collection right now...consisting of mostly classics and books that i've read and loved...now, if anyone has a book that has changed their life or something equally amazing, do tell. im always open to new things. please share your thoughts.

happy no matter what. always looking for the good in situations. im getting sick and tired of people always bringing everyone down with their complaints about things they cant control. like snow. why do i have to get angry about it? big deal. its snow. the earth needs it. there are many people who love it. so why cant i just find something good about it eh? hooray for snow. its pretty. its calming. it makes the ugly bleak winter beautiful. yes. happy thoughts. and now i am rambling. but the point is. i am going to try from this point on....my veryyyy bestest to not be debbie downer. and for that matter. i am not going to try and be serious/logical all the time. there are enough people in the world who are and most of the time its just not happy. so if anyone has a complaint about people being too happy, not serious, too emotional...then they can share that complaint with someone else. for real.
